Carrot “Fries” with Mint

Healthy finger food for your small fries

Serves 4
Ingredients
1 pound long slender carrots
3 tablespoons Filippo Berio Olive Oil
Salt and freshly ground black pepper
1 bunch of fresh mint
Preparation
Preheat the oven to 375°F. Peel the carrots. Using a crinkle cutter or a large knife, cut the carrots in half lengthwise into 2 long pieces. Cut the thicker half lengthwise into 4 long pieces. The goal is to get the carrot sticks shaped like french fries.

Put the carrots on a rimmed baking sheet. Drizzle with the olive oil. Using clean hands, toss the carrots so they are completely coated with oil. Sprinkle with salt and freshly ground black pepper. Roast for 20-25 minutes until tender, turning the carrots once or twice during baking. The carrots will be golden brown. Transfer them to a platter.

Wash the mint and dry well. Cut into very thin strips to get 2 tablespoons. Scatter over the carrots.
